Second, the left or large side of the Porterhouse is NY Strip. Third, the right side or smaller side is tenderloin better known as 'filet'.
So you get two types of steak, one on each side, extra flavor and they are dry aged before they are cut. Dry aging reduces the moisture content in the meat, eliminates the enzyme that causes meat to be tough, and enhances the flavor profile of the cut. This leads to one of the most flavorful pieces of steak you will ever put in to your mouth!

Next, the system is going to ask you for shipping information. Provide the shipping address where UPS can deliver your meat. We ship FREE via Fed Ex Ground for all orders over $100. The normal transit times are only 1 - 2 days. We ship using 1.5 inch thick insulated EPS Coolers. Our meat is frozen to 0F and packed with dry ice.
If you would prefer to pick up from our farm, no worries! Just give us a call at (251) 321-1038 after you check out. We'll give you directions and set up a day/time that works for you. Farm pickups are available 7 days a week while the sun is up.
Remember, it is important to immediately unpack your cooler upon delivery, and freeze the contents that you do not wish to thaw and eat immediately. We ship on Mondays, Tuesdays, and Wednesdays only to ensure your order gets to you before the weekend.
